I've been feeling pretty good lately. Once in a while, I'm tired. But for the most part, I'm getting stronger. Today my mom has a cold. So I shopped and got some awesome organic stuff to make chicken soup. It smells great. I don't want a cold right now. I hope she gets well asap.

I can do this. We have soup.

Two favorites in my house are...

MY HOMEMADE CHICKEN SOUP

6 cups chicken broth (low/no sodium)
1/2 cup finely chopped green onion
1/2 cup finely chopped celery
1/2 cup finely chopped carrot
3-4 Herb OX chicken cubes
(like bullion cubes, but no/low salt)
1-2 tsp Mrs. Dash (Garlic blend)
2-3lbs boneless chicken meat
(chopped into small pieces)
??? fine egg noodles

add spices to broth

bring to boil on stove top

when boiling add veggies and chicken meat

simmer until veggies and chicken is cooked

bring to rolling boiling

add noodles (amount will vary depending on many
noodles you like in you soup. My family prefers an outrageous amount of noodles, lol.)

when noodles are cooked, remove pot from burner/turn off burner.


MY QUICK AND EASY MILD CHILI

1 pk Mild Chili Mix (usually McCormick's brand)
1 lb hamburger
1 (16 ounce) can mild chili beans (usually Bush's)
1 (15 ounce) can tomato sauce
1 (16 oz)can/jar mild salsa

cook ground beef with chili mix on stove top in fry pan

add all ingredients (including cooked hamburger w/chili mix)together and simmer on low to medium heat 20-45 minutes.

Obviously, if you like spicier chili, use mix, beans and salsa of a spicier variety. My husband is a wuss and insists on mild, lol.

I so hope your mom gets better soon. I have had a crude bug for almost a week and still feel like cold doggie poo! Which is better then yesterday-smeared cold doggie poo.
Yeah chicken noodle soup.
I just through chicken de-boned) in a pot with organic chicken stock and what ever veggies I have one hand...
carrots, broccolii, coliflower (sp?)peas, green beans, and always noodles if not elbow than it is speggettie.
salt, pepper, garlic, onion

Here's my chili recipe....it's kinda vague cause I vary it from batch to batch but it's very yummy and sooooo goood for you!
You need a large stock pot for this recipe.....
1 lb. ground sirloin or ground chicken or turkey if you prefer. (I have also used tofu which works well too!)
1 large onion diced
4 cloves of garlic finely chopped
1 green pepper diced
1 red pepper diced
2 cubano peppers diced
3 jalapenos diced finely (can be modified if you don't like a little zing)
I sautee all these things together until everything is looking mostly cooked--

Then add:
2 cans black beans (15 oz)
2 cans garbanzo beans (15 oz)
2 cans dark red beans (15 oz)
2 cans diced tomatoes (28 oz)
1 can tomato paste (6 oz)
1 lg can tomato juice (46 oz)
lots of sliced button mushrooms
Chili powder to taste
salt and pepper to taste

I simmer it for at least 4 hours and it's even better the next day. Makes enough for 2 people for several meals. My hubby likes it with cheddar cheese and sour cream on top. I like it over jasmine rice sometimes.
