Thanks to these

I woke up for the first time since November 2005 without a headache. I was pretty groggy because they gave me morphine last night, but the bad bad headache wasn't there. I now have the dull buzz again, but I took a nice shower, ate my breakfast, and went for a nice walk to the cafeteria to get a Sixbucks.
I also am getting some consults with the endocrinology team to get my diabetes meds set correctly. One day I bottomed out 3 times and then the next day they were high all day. They gave me a big dose of steroids to see if that helps any, but I bet my blood sugars will be huge today.
At 1:00 pm I will get a massage to see if that helps any.
Sounds like a spa, huh?
I miss Zoe fiercely. She's not been sleeping well. And I'm trying to organize her birthday party from afar.

It was a 20 mnute massage, and it helped a little. I still have the headache, but she said that my neck and shoulders are really tight. My blood sugars actually went low a few times. I've been eating really healthy, but I'm sure getting tired of the same old salads. I've been eating the same meals over and over. I look forward to something different.
They said they will let me out tomorrow (most likely). I can't wait to see my family.

Your assignment today is to tell me about your favorite salad of all time (or favorite healthy dish). I have recreated this MDA dish at my house. Greek salad, easy to make:
Mixed greens
Feta cheese
Pitted Kalamata olives
Tomatoes
Green beans (I bought frozen, then stored in the fridge)
Drizzled with balsamic vinegar.
I'd add the red onion, but only if they aren't too strong.
Spill for me. I need some creativity here.

Posted by: russell at March 14, 2007 06:35 PMohmilord, my favorite salad right now, this instant, is spring greens mixed with spinach, crumbled goat cheese, pitted kalamatas, those little tiny grape tomatoes that burst with flavor when you bite 'em, some scallion, avo, and brianna's blush wine dressing (the one with the strawberry on the label that has no strawberries in it, but apparently tastes great on strawberries). purrrrrrrrrrrrrrfection!
i'm glad the big headache was gone this morning, but i sure wish you could get out of the big house to go be with the zoester and leave that headache forever at MDA!

cook chicken breasts, cool and shread
put in bowl and add mayonnaise and liquid smoke to taste--but not too much, maybe a capful for 2 breasts
you can stuff celery sticks with the chicken then put the onions on top or you can use wheat thins and eat for an appitizer

How about this, baby spinach leaves, cherry tomatoes, avacado, yellow pepper, little flafels and a dollop of humous for that extra chickpea goodness. Mmmmm.

Plain old iceberg lettuce, very cold
Very good olive oil
red wine vinegar
Salt - salt the lettuce itself
grind black pepper
It's something I indulge in not too often due to the salt, but it's just the best with a steak!
I'm glad you are getting some relief. cool to have a hospital with sixbucks!

My fave salad right now:
quinoa (rinsed first, then cooked) tossed with chick peas, grape tomatoes, crumbled feta, black olives, and scallions, dressed with a champagne vinegrette spiked with minced garlic and a little horseradish mustard. YUM!

Spelt or farro
1 white or yellow onion
1 clove of garlic
Extra virgin olive oil
1 package of small Puy lentils
1 pound of Italian style turkey sausage
Healthy sprig of rosemary
Croutons or crusty bread
Shaved parmesian cheese
Cook some pearled spelt or farro as per the instructions.
Chop the onion and garlic and sweat them in olive oil
Add lentils, rosemary and enough water to generously cover and cook until they are almost tender (about 30 minute)
Remove the casing from the sausage, break up the sausage filling and drop into the cooking lentils. (Add hot water if you need extra room)
When the lentils are fully cooked serve in a bowl over spelt.
Top with croutons, a couple of shavings of parmesian and a drizzle of olive oil.
Serve with a sturdy Italian red wine.
Delicious. We're having this one tonight.

Marinate chicken breasts in garlic lime marinade - think it was from Heinz, then grill and cut up bite sized. Add the chicken to:
lettuce - we mix iceberg and romaine
grape tomatoes
bite sized broccoli
peas
itty bitty bit of red onion cut very tiny
shredded carrots
shredded Mexican blend cheese
cucumber if it doesn't upset your stomach
hard boiled egg, cut up
Fran adds black olives, but I don't like them
Toss altogether with Ken's honey mustard dressing. Although, if I were still in TX I'd see if Johnny Carino's sold bottles of their house salad dressing.

and it's so so good and I can never really recreate it.
Or how about this?
A container of sour cream, one of cottage cheese, scallions sliced, radishes sliced, cucumber cubed.
Eat it with rippled chips.
DON'T LAUGH TILL YOU TRY IT.
Four generations in my family have made it and call it Summer Dip.
